What is Kurouchi?
Kurouchi (黒打ち), which translates to "black-forged," is a traditional style of Japanese knife making. It refers to the black, rustic, and textured finish that is left on the upper part of the blade during the forging process.
This black finish is essentially the result of oxidation (or patina) and scale that is left unchanged after the forging and shaping process. It's a characteristic feature of hand-forged knives, and it's often appreciated for its rustic aesthetic. Additionally, this kurouchi finish helps to protect the carbon steel and reduce the reactivity of the blade.
Kurouchi knives are typically high-carbon steel, although some makers also incorporate stainless steel. Keep in mind that this type of knife requires some care to maintain. For instance, it's usually best to hand-wash and dry these knives immediately after use to prevent rusting.
It's also worth noting that the kurouchi finish may wear away over time, particularly in areas of the knife that come into frequent contact with food and cutting surfaces. This is normal and doesn't negatively affect the performance of the knife.
